You cannot safely remove those rollers without releasing spring tension first, and a wound torsion spring on a standard residential door carries enough force to break a wrist or worse. The other thing worth knowing before you start: on the 1980s-90s doors common here, the track brackets are often rusted or the fasteners are painted-over and stripped.
